What I usually use

  • 8-ish tater tots
    1. I usually make extra & eat the rest as a side
  • 2 eggs
  • 10in flour tortilla
  • Shredded cheese
  • Butter or Oil for the pan
  • Optional:
    1. Bacon bits (real or fake. Adds savory contrast)
    2. Basil (mixed in w/eggs)

Instructions

  • Make tater tots according to package instructions
    1. Since the eggs will cook fast, this is a great time to clean up any dishes you forgot about
  • Once cooked, take some of the tater tots & lay them out in the center of your tortilla. Sprinkle your cheese over top it while it's still hot so it has a chance to start melting
  • Scramble your eggs & cook to taste, then once you're done add the eggs over top the cheese.
    1. I usually scramble them on low heat directly in the pan so I don't have to clean as many dishes afterwards. Personally I prefer a slightly runny scramble, but cook to your own tastes!
  • Optional; add bacon bits, or other preferred add-in
  • Roll up your burrito and enjoy!

Other Notes

  • I cook my eggs on low heat is it's easier to control the texture / not overdo them. Plus, I can start cooking them as the tater tots are finishing up.
  • Part of the reason I like this is because most of the things can be stored for a while, or are usually in the house. Tater tots? frozen goods. Tortillas? freeze to extend shelf life & reheat for 15-30 seconds when using. Eggs & shredded cheese are stuff my family usually keeps in the house
